I personally like Ormandy with the Philadelphia Orchestra.

I like listening to living conductors and living composers. Go out and see the L.A. Phil, when you can. And there are other living composers than John Williams. Listen to John Adams. I love his Nixon in China. Even if you are like me, conservative politically, there is a lot to like in this opera.

When Leonard Slatkin was conductor of the St. Louis Symphony Orchestra they put out a TON of top-notch recordings (most on RCA/Victor Red Label, if I recall correctly).
The Slatkin/SLSO recordings of Orff's "Carmina Burana" and Copland's "Symphony for Organ" are the best I've ever found.
